what kind of lines would something like this actually be used for, gauge connections or more of a pilot line setup?

Both, really. Microbore hose like this is built for low-volume hydraulic work where you need the line to snake through tight spots without fighting it the whole way. Pilot lines, gauge connections, instrument sensing lines, that's the sweet spot.
