adapter's made of stainless steel, does that hold up around saltwater or chemical washdowns without rusting out?

Stainless steel is exactly what you want in those conditions. Corrosion resistance is the main reason this material gets specified for marine hydraulic systems, chemical processing lines, and wash-down environments. It will hold up considerably better than carbon steel or brass fittings would in wet or chemically aggressive service.
