stainless steel on this one -- does that mean it holds up decent when moisture or chemicals are around it?

Stainless steel was the right call for exactly that kind of environment. Corrosion resistance is built into the material itself, so exposure to moisture, humidity, or a fair number of industrial fluids won't eat away at it the way carbon steel fittings tend to degrade over time. For use running in wash-down areas or anywhere condensation is a regular issue, it makes a noticeable difference in how long the fitting stays in service.
