fitting says "not for compressible products 1-1/4 and above", does that mean air and nitrogen are completely off the table for this size, or just in certain setups?

For this size, yes, air and nitrogen are out regardless of setup. That restriction applies to 1-1/4 inch and larger combination nipples across the board, and this one falls right in that range at 1-1/2 inch. Stick to liquid service with this fitting.
