what's the difference between the hose barb end and the male pipe end on this fitting, and which side connects where?

The 1 inch hose barb end is meant to slip into and grip a hose, held in place by a clamp or ferrule. The 3/4 inch male pipe end threads into a female pipe port on a pump, valve, or manifold. So the barb side goes to your hose and the threaded side goes to your equipment.
