If I braze this onto some copper tubing, will that mess up the adapter?

These steel adapters are designed for brazing or welding to create permanent connections, so using copper tubing should not be a problem as long as proper brazing techniques are applied. Just be sure to use the correct brazing alloy for joining steel to copper.
