Will this fitting hold up okay if I'm running some pretty hot oil through it, say around 200 degrees F?

fitting says reduced bore, does that mean it won't flow as good as a full bore 1 inch JIC setup, or is the difference pretty minor in most hydraulic lines?

Reduced bore does mean the internal flow path is slightly smaller than a full-bore equivalent at the same hose size. On a -16 hose with this fitting, you'll see a modest restriction compared to a full-bore 1-inch JIC connection. For most standard hydraulic circuits running moderate flow rates, the practical difference is minimal and the tradeoff is usually worth it for packaging reasons.
