got a hose end that’s 3/4-16 JIC, what’s on the other side of this adapter?

On the other end you get a 9/16-18 male SAE O-Ring Boss (straight thread O-ring) connection, so it bridges 3/4-16 male JIC 37 degree flare to 9/16-18 male ORB.

Got a port on my hydraulic manifold threaded 9/16-18 ORB and I need to tie into a JIC line, this the right adapter for that?

That's exactly the use case this adapter covers. One end is a 9/16-18 male SAE O-Ring Boss, the other is a 3/4-16 male JIC 37 degree flare, and it runs straight through with no angle. The ORB side seals against the port with an O-ring, which keeps things tight without relying on thread torque alone for the seal. Just make sure your manifold port is female ORB and your JIC fitting is female, since both ends on this one are male.
