Does this cap work with 16mm tube fittings running at high pressure, like up around 500 or 600 bar?

Rated up to 630 bar, this cap handles that range without issue. It's built for S Series metric flareless assemblies with a 16mm tube OD, so as long as your system uses that tube size and conforms to DIN standards, you're in the right territory. The 4:1 safety factor is already built into that pressure rating.

got a 16mm metric tube fitting setup already, is this cap the right one to close it off

reckon this cap will hold up if I'm pushin' close to that max pressure rating of 630 bar?

This cap is certainly suited to that level of pressure. The Series S fittings are rated from 160 to 630 bar, with a 4:1 safety factor, so you've got some margin built in.
