these just press in or do they thread into the fitting?

Tapered NPT plugs thread in. The taper on the plug matches the taper of the pipe thread, so as you turn it in, it wedges snugly into the port. No press-fit here. Hand-tight is usually enough for a protective plug during storage or shipping, but a couple turns with a wrench will seat it more securely if you need it to stay put.
