seals on this are NBR -- will that hold up running standard mineral hydraulic oil day in and day out?

NBR is well-suited for mineral oils meeting ISO 11158, which is exactly what this valve is rated for. Continuous use with that fluid type is fine within the listed temperature range of -30 to 120°C on the fluid side. Where NBR starts to struggle is with certain synthetic fluids or aggressive additives outside that spec, but on straight mineral oil circuits it holds up reliably.
