how tight should I be torqueing these fittings down? got a m26 thread on em.

Proper installation requires tightening the fitting to between 81 and 96 foot-pounds. Going outside that range might risk damaging the M26 x 1.5 threads or ruining the seal.

Trying to replace a fitting on a -10 hose, what exactly are the ends on this one?

On the hose side it is made for a -10 hose and it is a straight steel crimp fitting for 1 and 2 wire braid hose. The thread end is a metric female swivel with M26 x 1.5 threads, using the German DIN 3902 24 degree flare light duty style, and it is sized for 18 mm tube OD.

Will this fitting hold up okay in a hydraulic system for a log splitter?

It's designed for general-purpose low and medium pressure hydraulic applications, so it should work well for that as long as your log splitter operates within those pressure ranges. Just make sure your hose size is -10.

fitting says light duty swivel, does that mean it ain't gonna hold up in a high pressure setup, or is it fine for regular hydraulic work?

It's rated for general purpose low and medium pressure hydraulic use, so it's well suited for standard hydraulic lines that don't involve extreme pressure spikes. Where you do need to watch yourself is shock hazard situations. If your system sees sudden pressure surges or impact loads, you'll want to pair this fitting with H277 or H435 hose to handle that safely.
