fitting says it works with H277 or H435 hose, does that mean it won't crimp onto other -10 hose types?

For this particular fitting, H277 and H435 are the specified compatible hoses. Using it with other -10 hose constructions isn't something the manufacturer data backs up, so sticking to those two hose types is the right call if you want a properly rated assembly.
