fitting says it works with H277 or H435 hose, does that mean it wont work on other -08 hose at all, or is that just what they recommend?

Those two hose types are what this fitting is rated and spec'd for in its application guidelines. Using it with a different -08 hose might physically go together, but the crimp geometry and retention performance are validated against H277 and H435. If your hose isn't one of those two, you'd be outside the confirmed spec, which matters more when shock loads are part of the picture.
