fitting says it works with -12 hose, but do I need any kind of sealant on them NPT threads to get a good seal?

NPTF threads on this fitting are cut to a tighter tolerance than standard NPT, and that's what allows them to seal without thread sealant or tape. The thread form itself creates the seal through metal-to-metal contact when torqued properly. Standard NPT threads usually need sealant to compensate for the spiral leak path, but NPTF eliminates that. So no, nothing extra needed on the threads for a proper connection.
