got a 1 inch air hose here, is this the kind of fitting that just shoves in and clamps down on the barb?

For a 1 inch ID hose, the 1 inch hose barb is meant to insert into the hose and be secured with clamps. Keep in mind the working pressure can change based on the hose construction, the clamp type, how many clamps you use, and where they’re placed.

what's the temp range on this thing? got an outdoor setup that sees some pretty cold winters and hot summers

Rated for use between -20°F and 160°F with the standard rubber washer, so seasonal swings in most climates won't be a problem. Just keep in mind that rating applies to the washer included. If you swap it out for a different seal material down the road, that range could change.
