What's the highest pressure this vee packing set can handle, and does the number of vees actually change that?

Pressure capacity goes up depending on how many vee rings you stack in the set. Four vees handles up to 3000 PSI, five vees gets you to 5000 PSI, and six vees takes it all the way to 10,000 PSI. So yes, the vee count makes a real difference. If you're running higher-pressure hydraulic equipment, you'd want to make sure you're ordering enough rings to cover your system's operating pressure.
