six vees on this set, does that mean it's rated for the full 10,000 PSI right out of the box, or is that only under certain conditions?

Six vees puts this set at the top of the pressure range, rated from 0 to 10,000 PSI. Sets with fewer vees are rated lower, four vees tops out at 3,000 PSI and five vees handles up to 5,000 PSI. So yes, the six-vee configuration is what gets you to that full 10,000 PSI rating.

What kinda pressure can this handle, spec wise?

It can handle pressure from 0 to 3000 PSI when using 4 vees, 0 to 5000 PSI with 5 vees, and 0 to 10,000 PSI when using 6 vees.

got a cylinder that takes a 2 inch rod, is this the right v packing size?
