what's the pressure limit on this vee packing set if I'm only running 4 vees?

Four vees gets you up to 3000 PSI. If your system runs higher than that, you'd want to step up to 5 vees for coverage up to 5000 PSI, or go with 6 vees if you're pushing anywhere near 10,000 PSI. The set is built with fabric reinforced rubber and urethane vee rings along with nylon top and bottom adaptors, so the number of vees you stack is what determines your pressure ceiling.
